Delish Stuffing With mouth-watering Paani for Puris

According to legend of Mahabharata, Draupadi invented puchkas, at some places named as 'Paanipuri', 'Golgappa', 'Gupchup'even remembering the name our mouth starts to water. Once I read about the content of origin of pani puri. So goes like this, Kunti, mother in law of Draupadi, gave her wheat flour and some potatoes and told her to make something new out of it. Then Draupadi made small small puris of flour and boil and mashed the potatoes as filling and made some spicy water for the gravy and this led to invention of pani puri.

Panipuri or Phuchka is a type of snack that originated in the Indian subcontinent.
It consists of a round or ball-shaped, hollow puri (a deep-fried crisp crepe), filled with a mixture of flavored water (known as imli pani), tamarind chutney, chili, chaat masala, potato, onion or chickpeas
. There are many variants of stuffing now-a-days, but I am sharing my home-made recipe.

You can easily prepare this at home or even buy from market. I have tried many recipes, but it turned out to be soggy like puris. But this recipe you can try and test the taste. 

Ingredient for stuffing :

1. Boiled brown chickpeas(kala chana)/sprout moong(green gram) - 1/2 cup
2. Boiled big potatoes - 3 pcs
3. Red chili powder - 1/2 tbsp
4. Jaljeera/ Chaat masala powder -1 tsp
5. Salt to taste
6. 2/3 rd Roasted Spice
7. Chopped onion - 1
8. Chopped green chilis - 2 pcs
9. Tamarind water - 1/4 cup
10. Lime juice - 1 tsp
11. Coriander leaves- chopped (optional)

Preparation :

1. Scrape off the skin on potatoes and mash them.

2. How to make Roasted spices ?
Heat a flat pan/tawa and dry roast 10 gms of cumin (jeere) and 4 dried red chilis. Don't let it burn. Take mortar and pestle and smash it to finely-grinded spice.
Combine all the ingredients and mash them together. Check salt and spices to your taste.

2. Poke at the center of the puri gently and make a hole in puchkas and fill it with potato mash.


Ingredient for water :

1. Sprig of Mint leaves (Pudina) - finely chopped
2. Sprig of Coriander leaves - finely chopped
3. Tamarind with seeds - 50 gm
4. Green chilis - 3 pcs
5. Roasted spice - 1 tbsp
6. 3 cups of water
7. Rock salt - 1 tsp
8. Chaat masala - 1 tsp
9. Lemon slices and Lime juice

Preparation :

1. Combine all the ingredients in 3 cups of water except tamarind pulp. Add lime juice.

2. How to make tamarind water ?
Soak 50 gms of tamarind in 1 cup of water in a bowl for 10 mins. Mash to a soft, wet, pulp. Remove the seeds and other remnants.

3. Add this water to the 3 cups of chutney made earlier. Adjust the amount of salt and spices according to your taste. Leave the lemon slices in water. You can add ice cubes (optional).

Ingredient for sweet chutney :

1. Jaggery - 1/2 cup (crushed)
2. Tamarind pulp - 5 tbsp
3. Powdered dried Ginger - 1/2 tsp
4. A pinch of Garam masala
5. Rock salt - 1/2 tsp
6. Roasted spice - 1/3rd tbsp
7. Salt acc. to your taste
8. Lemon juice

Preparation :

Boil the ingredients except lemon juice with 1/2 cup water. Reduce to a thick smooth chutney. Add lime juice in the end. Mix it and serve when cooled.


Ingredient for dahi puchka :

1. Dahi - 1 tsp per puchka
2. Jhuri Sev Fry - 1 tsp per puchka
3. Stuffing - 1 tbsp
4. Sweet Chutney - 1 tbsp per puchka
5. Pinch of rock salt on plate
6. Red chili powder - 1/2 tsp or a pinch on plate
7. Chaat masala - 1/2 tsp or a pinch on plate

Preparation :

Present the puchkas on plate. Tap at the belly of puchka, make a hole, fill with aloo stuffing or ghoogni(optional). Add 1 tbsp of sweet chutney, a pinch of red chili powder and rock salt equally spread on puchkas with fingers, 1 tbsp of sweet chutney and 1 tsp of dahi on each puchka. Take 1/2 tsp chaat masala and spread on puchkas with fingers. Spread a dash of lemon juice on puchkas, 1 tsp sev bhaja per puchka and serve on plate. ENJOY !!
