Yeast are living organisms that remain in dry state, or imagine they are in an hibernating period, and has to be activated by an irresistable food. A pinch of sugar is a delicacy to yeast, or even a drop of molasses will do. They feed off of sugar to produce carbon-dioxide(you will see yeast bubbling when activated). If it doesn't and sinks to the bottom of bowl, it is stale.
It is single-celled fungi very useful for making bread, wine and beer, and also has nutritional value such as Vit B, selenium and chromium. It comes in a dry form in little capsule of dead cells to protect them. Activation re-hydrates the layer of dry cells to release living yeast cells inside.
There are 2 basic variants of yeast : instant and active dry . Active dry yeast has a shelf life of 2 yrs, after that it doesn't activate.

2 1/4 tsp of active dry yeast = 1 2/3 tsp of instant yeast

1 tsp active dry yeast = 3/4 tsp instant yeast
1 tsp instant yeast = 1/2 block of fresh yeast
1 tsp active dry yeast = 1/3 block of fresh yeast
Ingredients :
1. An envelop of dry active yeast - 1/2 tsp
2. A pinch of sugar for activation
3. Warm water - 1 cup
4. Spoon
5. Thermometer
Procedure:
1. If you have an packet of instant yeast, use it with dry ingredients following your recipe.
If you have active dry yeast, it has to be activated first.
Ratio of yeast to flour for dough, 2 1/4 tsp of yeast to 4 cups of flour.
2. Consult your recipe and decide the amount of yeast.
3. Fill the bowl with 1 cup of warm water, touch with finger and check, if you feel the heat gradually, the water is ready to use. Yeast dies under hot water and doesn't wake up in cold water. Check with a thermometer for optimum temperature of 37-43 o'c.
4. Dissolve a pinch of sugar/1 tsp sugar in warm water, take it according to your recipe.
5. Pour yeast into sugar water. Stir it until you see no granules of yeast floating dry. Cover the bowl with a towel or keep it in dry dark place to ferment. Yeast prefers dark place.
6. Now, wait for 7-10 mins to see it come alive, bubble and frothy on the top of water. Mostly after 1-2 min it start activating and can be used.
7. Start your recipe with this activated yeast.
