Thai salads often do not have raw vegetables or fruit as their main ingredient but use minced meat, seafood or noodles instead. Similar to salads in the West, these dishes often have a souring agent, usually lime juice, and feature the addition of fresh herbs and other greens in their preparation. Thai salads are not served as entries but normally eaten as one of the main dishes in a Thai buffet-style meal, together with rice.
I have made my style parboiled watermelon rind salad with chicken. Mostly we donot use the rinds but watermelon rind is full of nutrients, high in vit B and vit C. I don't have fish sauce at home, so i used teriyaki sauce. Follow my recipe for the goodness of watermelon rind.

Ingredients :

1. 1 cup of watermelon(thai : tang-mo) rinds + 1/4 cup of red watermelon
2. 1/4 cup of zucchini (alternate cucumber)
3. 1/2 cup of broccoli
4. 1 cup of colourful bell peppers
5. 1/4 cup of spring onions
6. 1/2 cup of onions
7. Boiled chicken (200g)
8. Spices
9. Butter - 4 tbsp or as reqd

For dressing :

1. 1 tbsp vinegar
2. 1 tbsp lemon juice
3. 1/2 tsp honey(optional)
4. fresh basil and mint leaves

Preparation :

1. Peel the green skin of whole watermelon (thai : tang-mo). Take the off-white rind of watermelon. No need to rip off if some red flesh is still there. Wash the rind and cut it into small cubes.

2. Heat the pan with salted/unsalted butter. Add diced cut vegetables - onions, broccoli, bell peppers. Saute it with a pinch of salt and sugar that suits your taste. Sprinkle little water and cover and cook on low flame for 2-3 mins. We need parboiled vegetables for this thai salad.

3. Meanwhile dice the previously boiled chicken and toss with the vegetables another 2-3mins. Add the watermelon (thai : tang-mo) rinds, diced zucchini little salt according to your taste and toss it. Add 1 tsp of teriyaki sauce (if you dont have teriyaki sauce add soya sauce), 1 tsp sweet and sour chili sauce, 1/2 tsp of honey, a tsp of oregano, a tsp of red chili flakes, and 1/2 tsp of black pepper powder and toss for a minute.

4. Add 7-8 mint leaves, 2 stalks of chopped fresh cilantro, 1/4 cup of chopped spring onions and 1/4 cup of red watermelon flesh. Add 1 tbsp of vinegar and toss the whole salad once. Switch off the flame.

5. Garnish with a stalk of fresh basil leaves and a stalk of mint leaves at the middle with a wedge of lemon.
You can consume this salad with rice as a complete Thai meal or just an appetizer. It will definitely give you nutrients in a delish way.
