Garlic Naan Bread |
A note of naan bread was first mentioned in the writing of Indo-Persian poet Amir Khusroo in 1300 AD. It was originally cooked at the Imperial Court in Delhi as naan-e-tunuk (light bread) and naan-e-tanuri (cooked in a tandoor oven). During the Mughal era in India from around 1526, Naan accompanied by keema or kebab was a popular breakfast food of the royals. Now-a-days, it is an Indian cuisine served hot with some spicy curry, very popular as a South Asian food especially in Northern Area of India, Pakistan, Afghanistan, Bangladesh, Iran, Uzbekistan, Tajizkistan and surrounding areas.
Ingredients :
2. Baking Powder - 1 tsp
3. Baking Soda - 1/2 tsp
4. Yogurt/Dahi - 1/2 cup
5. Milk - 1/4 cup
6.Cumin - 1/2 tsp
7. Sugar and Salt to taste
8. Vegetable oil
9. Butter-garlic mix
10. Egg - 1(optional)
Preparation :
1. Take 2 cups of flour (maida) in a bowl. Add 1 tsp sugar, 1/2 tsp salt, 1 tsp baking powder, 1/2 tsp baking soda, 1 tbsp vegetable oil and mix the dry ingredients. Now, add 1/2 cup of yogurt (dahi) and knead well.

2. Now, add 1/4th cup of milk gradually. Make a smooth dough. Rub 4-5 drops of oil on surface of dough and cover with a damp cloth. Leave at room temperature for 20-30 mins. Knead a little. In this step you can add 1/2 tsp garlic paste to the dough, or brush it with garlic-butter at the end.

OR,
1. In a bowl, dissolve yeast in warm water, wait for 10 mins till frothy. To understand more you can check my how to activate yeast recipe. Add 1 beaten eggs sugar and salt to taste, then milk gradually. Cover and after 1 hour it will rise in a double size. Knead it for another 8 mins.

3. Take small dough ball, roll it on a dusted flour surface. Roll it thin. Spread some black cumin. Roll it again so that the cumin get pressed on the dough. Flip the other side, take water on hands and pat the bread.

4. Heat a flat-pan (tawa), place the wet side of bread to the pan. Cover the pan and cook for a minute. Flip the pan along with the naan bread over the oven, set the oven to medium flame and cook till golden brown.

* As the naan-bread was patted with water, the base stick to the pan. Check for the golden brown colour, avoid burning.

5. Remove from pan with spatula, and brush with garlic-butter mix.
* How to prepare garlic-butter?
Take 1 tbsp melted butter and chopped garlic. Add 1 tbsp chopped coriander leaves. Mix and brush the hot bread with garlic-butter.
